Silvia’s Italian Table Frittelle Di Ricotta e Prosecco (Orange Ricotta Donuts) My strongest recommendation when cooking with wine is to choose it wisely and use anything that is good enough for drinking – after all, you only ever need a little bit for the recipe, the rest is to be poured and enjoyed.

Serves: 4 Ingredients • 2 eggs, lightly beaten • 1 tbsp. sugar • 250g of ricotta, from the deli counter and well drained • 120g of sifted self raising flour • Finely grated zest of 1 orange • Small pinch of salt • 150 ml Prosecco • Olive oil for deep frying • Icing sugar and orange zest for dusting on top Method Combine eggs, sugar, ricotta, orange zest and salt in a medium bowl. Add the flour and Prosecco and mix gently to not over stimulate the gluten. This batter is very forgiving and a few lumps are an addition to the texture. Pour oil into a shallow saucepan, and heat over medium-high heat. Drop tablespoons of batter into the hot oil and fry, in batches, for 2-3 minutes or until golden. Drain on paper towels.

Silvia’s Italian Table Arrange the fritters on a platter, dust them with icing sugar and top with a little extra orange zest. Serve hot or warm, with a glass of Prosecco!
