Early Years in Mexico:

The Cornejo family name can trace its roots back to Spain. By the 1840’s, the Cornejo family settled in Sonora, Mexico. Don Santo’s grandfather worked throughout Sonora as an industrious contractor building structures for the railroads and mines. On more than one occasion in the early twentieth century, he met with his friend, Pancho Villa at the Cornejo Ranch or while traveling around Mexico.

New Beginnings:

Don Santos was twenty-one when he came to the United States from Sonora with only $40 in his pocket that his family gave him for his journey. Don Santos landed in Eloy, Arizona, in 1963 and worked on local farms. His future wife, Eva, was born in Casa Grande, and raised in Eloy. Her father, Rudolfo Moran, was from Durango, Mexico, and migrated to the United States in the 1930’s. Like Don Santos, he landed in Arizona and worked on farms. Roldolfo met his future wife, also named Eva, in Phoenix and moved to Eloy in the 1940’s. There, they raised a family of nine children and two cousins. Eva is the third oldest of the Moran family. Nana Eva Moran’s grandfather, who came to the United States from China, were very successful business owners with restaurants, bars, and the Plantation dance hall in early Phoenix history. Don Santos and young Eva met in 1964 working on a cotton field in Eloy. Don Santos had been home sick and without a home cooked meal for over a year. On their first date, Don Santos requested that Eva prepare a home cooked meal for the two of them. Eva loved to cook. As a young girl, she did a lot of the cooking for the large family. Preparing a meal for Don Santos was exciting for her and very natural. Eva prepared a family favorite of two eggs on top of home-made tamales. Don Santos had never experienced this combination and instantly fell in love with Eva’s cooking. They were married soon afterwards. Terrie

Over the years, Eva dreamed of one day opening her own restaurant to share her cooking skills. On July 3rd, 1985, Don Santos and Eva opened their first and original Eva’s Fine Mexican Food restaurant on Sunland Gin Road near Interstate 10. Together, and with family help, Don Santos and Eva found a building that needed to be moved more than three miles onto the present location. After a year of work and with the help of their brother-in-law, Roy Gonzales, the newly restored Mexican restaurant opened its doors to the public.Thus, Eva’s dream became a reality.

Present Day:

The second Eva’s Fine Mexican Food and Don Santos Cantina was opened in 2008. Our restaurants have been a part of the Casa Grande community for more than twenty-five years. Don Santos and Eva have enjoyed sharing their food and hospitality with patrons, friends, and families. We are just as passionate about our restaurants and the food we serve today as when we opened our doors in 1985. We are excited that you are here enjoying a meal and sharing our rich family heritage with us as though you were at the Cornejo family table. We still use many of the family recipes that our mother taught us when we were growing up. Our newest location is very reminiscent of the Tata Santos Ranch in Sonora where the Cornejo family worked, lived, and ate together. The restaurant design is that of a hacienda in Mexico.The hand-painted Don Santos Cantina and dining rooms can accommodate large groups to celebrate the gift of family and friends.
