    Casarecce  with  Walnuts  and  Ricotta   Garofalo invited Italian bloggers, who knew about gluten free pasta, to create recipes that were ‘right’ for the flavour of the Garofalo gluten free pasta. Caserecce with Walnuts and ricotta is just one of them, an easy recipe that can be enjoyed by all not just those on a gluten free diet.

Serves  4  :    Cooking  time  15  minutes    :    EASY   Ingredients   320g Garofalo Gluten-Free Casarecce 125g walnuts 250ml milk 40g Parmesan cheese 250g fresh ricotta cheese Salt, pepper to taste Olive oil to taste Method In a food processor place the walnuts and blend until chopped fairly thin. Add the Parmesan cheese, salt, pepper and 3 tablespoons of olive oil, whisk again and then add the ricotta. Mix thoroughly using milk to dilute the mixture until it becomes creamy. When you have reached the desired thickness, pour the cream into a bowl and keep it in a cool place until ready to serve. Cook the pasta in salted water, drain and toss with the cheese and walnut mix. If needed, use the cooking water to bind and soften the dressing. For additional crunch, add the walnuts coarsely broken directly into the pot.
