I.

INTRODUCTION : This Institute was started in 1972 as a registered Society under the Andhra Pradesh (Telangana Area) Public Societies Act, 1350 Fasli (Act I of 1350F) in the name and style “Food Craft Institute (Hyderabad) Society”, Hyderabad. Government of India, Department of Tourism, New Delhi have upgraded this Institute in 1984 by introducing a 3Year Diploma in Hotel Management and Catering Technology. Consequent on up gradation, the name of the Institute has been changed from “Food Craft Institute” to “Institute of Hotel Management Catering Technology and Applied Nutrition”. This Institute is functioning under the academic control of National Council for Hotel Management and Catering Technology, Noida, an Apex Body set up by the Department of Tourism, Government of India. Prior to the up gradation, only Craft Certificate Courses of Six months / One Year duration were conducted in the trades – Cookery, Bakery and Confectionery, Canning and Food Preservation, Restaurant and Counter Service, Hotel Reception and Book-keeping and House-Keeping including a Postgraduate Diploma Course in Tourism and Travel. The examination for these courses were then conducted by the State Board of Technical Education and Training, Government of Andhra Pradesh, Hyderabad and Certificates awarded by them. Now the examinations for presently run courses are being conducted on all India basis by the National Council for Hotel Management and Catering Technology, Noida and the certificates are awarded by the Council directly. From the Academic Year 2002-03, the 3-Year Diploma in Hotel Management & Catering Technology was converted into 3-Year Bachelor of Science Programme in Hospitality & Hotel Administration (B.Sc. – HHA) and the certificates for the graduating students are being awarded by the Indira Gandhi National Open University (IGNOU), New Delhi, in 2006-07. To create employable skills among the unemployed youth, ‘Hunar Se Rozgar’ programme under Capacity Building for Service Providers sponsored by Government of India, Ministry of Tourism (HRD), is being conducted at this Institute offering four courses: (a)Food Production - eight weeks ; (b)Food and Beverage Service –six weeks; (c) House-Keeping – six weeks and (d) Bakery – eight weeks . Stipend of Rs.2000/ for eight weeks courses and Rs.1500/- for six weeks courses is being paid on attaining the attendance of 90%. Placement assistance is also provided to the candidates to get employment in various organizations.

II.

AIMS AND OBJECTIVES The objectives of the Institute are to maintain high academic standards, discipline and sustain a healthy rapport with all the approved Hotels and allied Organizations. One of the main objects is to help and coordinate in securing employment to the graduating candidates.

III.

FACILITIES Located close to Osmania University, 5 Kms from Secunderabad Railway Station and 10 Kms. from Hyderabad Railway Station. IHM-H provides excellent Lab, Class-Room and living space for the students. Offering a world class ambience, the outstanding infrastructure includes a well planned Front Office Lab, modern and integrally equipped Lab Kitchen, Training Restaurant, Computers with multimedia, Model Guest Room and a Library with a vast selection of reference books. Meticulous care in implementing the curriculum involves live-demonstration in Bartending and even lessons in flower arrangement. Comfortable accommodation for boys and girls is 7

provided in well appointed hostels and a spacious students’ dining hall makes meal times a pleasure. IV.

MANAGEMENT The Institute continues to function as an autonomous body and is managed by the Board of Governors – the Chairman and Members being from the Central and State Governments and also from Hotel Industry. i)

Provisions of Memorandum of Association/Rules The Institute is working as a Society with the objects and policies laid down by the Government of India, Ministry of Tourism, in accordance with the rules, Bye-Laws and any instructions, orders , guidelines issued from time to time

ii)

Constitution of the Board, incumbents on 31st March, 2016 The Institute functions as an autonomous body and is managed by a Board of Governors – The Chairman and Members’ being from the Central and State Governments who are exofficio and from Hotel Industry who are nominated by Central Government, India Tourism.

iii) Constitution of the Executive Committee and incumbents on 31st March, 2016. ADMISSION PROCEDURE: The admissions for the B.Sc. in Hospitality & Hotel Administration are done by the National Council for Hotel Management and Catering Technology, Noida, through a common Joint Entrance Examination followed by counselling on all India basis. For other courses, admissions are done by the Institute itself as per the norms of the Council which are mentioned below: For S.S.C. / X Pass candidates: I.

CRAFTSMANSHIP COURSE IN FOOD PRODUCTION (Duration: One & half year – full time)

II.

CRAFTSMANSHIP COURSE IN FOOD & BEVERAGE SERVICE (Duration: 24 weeks full time)

(a)

Standard of Admission for both courses: S.S.C. / 10th of 10 + 2 pattern or equivalent pass in one attempt) with English as one of the subjects in the final of the school examination. 11

POST GRADUATE DIPLOMA IN ACCOMMODATION OPERATIONS AND MANAGEMENT (Duration: One & half year – 2 Semesters) – The course relates to the Hospitality Industry with training inputs in Housekeeping and Front Office.

(a)

Standard of Admission: GRADUATE in any stream from a recognized University passed in one attempt. Candidates who appeared for Final Year Examination and awaiting results or Marks Sheet can also submit the application form.

Age: Maximum age of 25 years for P.G.Diploma in AOM course and 22 years for both Craftsmanship Course in Food Production and Food & Beverage Service as on 1 July of the year of admission (relaxable up to 3 years in case of SC / ST candidates). XV.

INNOVATIONS/GOOD PRACTICES 1.

Good Practices: We are providing residential accommodation to the out station students admitted under the CBSP Scheme (short courses of Hunar Se Rozgar and Skill Testing and Certification programme )two ourses i.e, Eight weeks in Food Production and Six weeks course in Food & Beverage Service to attract the rural candidates. This unique Idea has been appreciated by the GOI, Min. of Tourism and has been communicated to other IHMs to follow.

Hunar Se Rozgar program extended to PWD ( persons with disabled) who were deputed by Vocational Rehabilitation Centre for Physically Handicapped, Ministry of Labour, Govt. of India , Hyderabad and they were placed in various hotels.

Psychological Counsellor on the campus.

Revenue Generation Activities: (a) Hiring the Institute premises to BITS Examination/cinema shooting.

ART OF LIVING CLASSES; In order to inculcate good living habits & change in life style, the IHM-Hyderabad tied up with “ YES” (Youth Empowerment Service) organization. Two batches of students were enrolled for the one week duration of program. The students feed - back is highly encouraging as there is considerable change in their life style.

XVII. EVENTS AND ACTIVITIES: APRIL 2015: The month of April was fun filled, being a stress buster for the upcoming semester exams. T h e month began with the annual day celebrations followed by a series of theory and practical exams, bringing an end to the semester. 8 April 2015 (day 1 of the annual celebrations) - Prize distribution ceremony was held at the institute wherein prizes for various competitions held by the college committees, were given off by the three special invitees: Ms. Naina Jaiswal, India’s numero uno table tennis player, who has also set a record of being the first Asian girl to complete her graduation at the age of 13 years from IGCSE; Ms. Syeda Falak, a karate athlete who has represented India at several world karate championships and Mr. Mohtesham Ali, a professional body builder, who won the silver medal at Mr. World 2008 in Las Vegas and also achieved the 6th place at Mr. Universe, Florida.

9 April 2015(day 2 of the annual celebrations) - The event sparked off with welcoming the chief guests , Celebrity Chef Mr. Puneet Mehta, Mr.Vijay Tenneti, Vice President Daspalla Hotels, Hyderabad and the Principal of Institute of Hotel Management, Kolkata, followed by a speech by our Principal, Mr. Sanjay Thakur. On this occasion the Institute launched its Book on “Andhra Pradesh and Telangana Cuisine” which was authored by the chef faculty of the institute. The Literary Committee released the 30th edition of “CACKLE”, the annual magazine of the institute. The event was followed by a cultural extravaganza with stellar performances by the students and the event culminated with a scrumptious buffet.

13 April 2015- Practical exams for the second year students commence. 20 April 2015- Practical exams for the first year students begin. 27 April 2015- Practical exams for the third year students begin. Reporting of second year students, who returned after their industrial training of seventeen weeks. 27 April 2015-02 May 2015- As a part of the third year food and beverage practical exam, the students, were divided into six groups and had to setup a themed restaurant. In addition to setting up the restaurant on the given themes, each group had to also present the following: Ø

A Business Plan for the theme.

An a la carte menu to be planned and a menu card to be designed.

Staffing to be planned by the team.

Ø

SOP’s to be written for at least ten tasks performed in the restaurant.

A 3-D model of the restaurant.

Restaurant to be appropriately named.

Bar set-up with two cocktails and mocktails each, to be made and served during lunch.

13th May: The institute took the initiative to train the supervisory level employees of Indian Railway Catering and Tourism Corporation (IRCTC), enabling them to train their food handlers more effectively and inculcate hygienic practices among them. 14th May: The Institute hosted a grand farewell party for the passing out batch of the Final Years students. It was an event that had mixed emotions from students as well as the faculty members. Balloons were released in the air to signify the importance of aiming high and to never stop trying. 21 July 2015- Lufthansa Cook and Fly competition commenced. The challenge was to create innovative Indian recipes that on selection would feature in the Lufthansa business class menu. 24 July 2015- A session was conducted by Mr.Dinesh Rai, Hotel Manager, Mercure Hyderabad KCP for the first year students. 24 July 2015- 26 July 2015- Travel and Tourism Fair was held by the Ministry of Tourism, Government of India, at Hitex grounds, Hyderabad where our college set up a stall to promote employability skills amongst the youth belonging to the economically weaker sections of the society under the Hunar se Rozgar Tak programme.

October 2015: 11th October 2015 – Facial Yoga Event Positive affirmations are a great way to help re-programme the mind to feel happier and healthier.” I am healthy, confident and relaxed, I accept and love who I am today and I am happy in the present moment”, was the real motive behind the conduct of the facial yoga event in which a majority of our students participated. To create awareness on Facial Yoga for a holistic approach for good health & well being, this event was spearheaded by BEING WOMEN, an NGO founded by Ms. Ruchika Sharma, celebrity chef and author of various cookery books. The techniques were all about busting stress and relaxing muscles. The participation of our students enormously helped in setting the record and getting India a place in the Guinness Book of World Records for the Largest Facial Yoga Class.

27th October 2015- InterContinental Hotel Group Campus Drive The InterContinental Hotel Group visited our campus and picked up a pretty good number of students for the various programmes offered by them.

30th and 31st October 2015 – Jalwa 2015 The trace of success by the gems of IHM knows no bounds and they leave no stone unturned to touch the sky. Jalwa 2015 is one amongst them where they unanimously participated with a bagful of enthusiasm. On the very first day students fired the stage where dancing, singing, storytelling and abhi toh party shuru hui hai were some amongst the many events. On 31st October the was the distribution of prizes to the winners, and with no doubt

November 2015: 9th November 2015: 2nd year students started with their 3rd Semester Practical Examinations, followed by Theory Exams. Different batches were given different menus for their kitchen practical exam, where they had to do an elaborate setup according to their respective menu and present the dishes.

12th November 2015: Accor Hotels visited the institute for campus recruitments. They selected students came for all the 4 core departments along with some other departments like sales &marketing, Human Resources, etc. 16th November 2015: Commencement of 5th Semester Theory Examinations for 3rd year students, followed by Practical Exams from 30th November 2015. For their F&B Practical Exam they were given different themes (Mardi Gras, Fall, Bollywood Retro, Pirates and Orange), according to which they had to create the right ambience pertaining to the given theme. This was also widely published in local newspapers.

16th November 2015: 1st Semester Examinations for 1st year students commenced, followed by Theory Exams. External Invigilators from various 5 Star Hotels of the twin cities were invited for assessing the students for their respective practical examination.

December 2015: Cake Mixing Ceremony: As per the IHM-H tradition, an elaborate cake mixing ceremony was organized at Chefs Court, the Training Restaurant, on the 4th. The invitees included Mr. Rawat and Mr. Somyadeep Bhattacharya, Chef and F&B Manager respectively at the Taj Group of Hotels, Hyderabad. The staff members and the students actively participated in this ritual.

Special Workshop on emotional intelligence: In order to enhance the employability skills of the students, a special workshop on emotional intelligence was organised for the 2nd year students of the institute. The workshop was conducted by the well known corporate trainer Mr. Karunakar Rao. Special sessions by experts from the hospitality industry covering value added topics were also organised for the students

Christmas Celebrations: A traditional Christmas buffet lunch was one of the highlights of the Christmas celebration at the institute. The executive chef Mr. Yogender Pal and the Director HR Ms. Lizanne Pinto from Marriott Hyderabad were the special invitees. The college wore a festive look with lots of Christmas decorations, ranging from Christmas bells, Santa Clauses and Mistletoes, in the lobby and the adjoining corridor.

Life Membership of ACP: On behalf of the institute, the principal Mr.Sanjay Thakur received the life membership certificate from the Association of Catering Professionals, Hyderabad.

January 2016: College Re-Opening : College re-opened on 4th January 2016 after Christmas vacation for all staff and students. Republic Day Celebration: On the morning of 26th January the patriotism of our students and faculty reignited. The National Flag was hoisted by the principal Mr. Sanjay Thakur, who gave an inspiring message which was followed by speeches in English, Hindi and Telugu by the students. For the first time, in the history of the institute, an award for “The Best Attitude” among students of the various disciplines was instituted in order to motivate them and to create a healthy competition. There was a dance and choir performance by the students of 1st year and the ceremony concluded with the National Anthem.

Pongal Celebrations: As per the IHM-H tradition, an elaborate lunch was organised at Chef’s Court, the training restaurant, on the 14th. The special guest was Mr. Chris Brown, a freelancer and an authority in the field of food & beverages. The whole restaurant was decorated in the festive theme.

PAU (Punjab Agricultural University Ludhiana Department of food & Nutrition): 30 girl students from Punjab Agriculture University Ludhiana, Department of Food & Nutrition, along with faculty members, Dr. (Mrs.) Kiran Grover and Dr. (Mrs.) Navjot, visited the college to get an insight into the nutritional aspect of food and its importance in catering technology.

February,2016: No Food Waste Week: A step towards prevention of food wastage in college was taken by the Environment Health and Safety Committee under the supervision of Mrs. Kalyani. 08/02/2016 to 12/02/2016 was dedicated to this cause where the members of the committee were on their toes keeping an eye on wastage of food in the Student’s Dining Hall. 16th Inter Collegiate Flower Arrangement Competition: The Housekeeping Department was seen all charged up with the 16th Inter Collegiate Flower Arrangement Competition held on 18/ 02/2016 under the guidance of Mrs. Saraswati and Mr. Rajesh. A total of 5 colleges were invited for the competition .The students came up with creative ideas and delivered inspiring messages through flowers arrangements.

Smiley Week & “ Rastra Bhasha” Saptaha: ‘A smile is a curve which sets everything straight’ The Hindi Committee took charge of the smiley week and “Rashtra Bhasha” Saptah celebration from 22-02-2016 to 26-02-2016 by creating a cheerful and light environment in the chef’s court. The entire restaurant was decorated with beautiful smiling faces and quotes in Hindi were quoted that were once delivered by the eminent personalities of India. The lunch started off with speeches being delivered by the members of the committee, followed by live performances. Dance Competition: 29-02-2016 was marked as the commencement of Cultural Activities. It started off with the Dance Competition under the supervision of Mrs. Saraswati , Mrs. Meenakshi and Mr. Suman. The students presented spectacular performances which made the jury members decision tough and gave a gala time to the audience.

Literary Committee competition : literary committee organised various competitions from 19/02/2016 to 26/02/2016. Students participated with great interest in scramble, spell bee and impromptu competitions and bagged exciting prizes.

Teaching Beyond Rooms: Walk The Talk: Inspired by the quote ‘health is wealth’ Mr. Rajesh took the 2nd year students out for an early morning jog to Osmania University on 13th of February, educating them about the importance of a healthy life. He also shared his knowledge about flora and fauna and educated the students about the various environmental hazards and their consequences to the people. Rotation: A marathon of 5km was organised by the Rotary Club on 28/02/2016 which was done to spread awareness about the literacy percentage in India. Slogans, banners, pamphlets were distributed to the public along with some live performances. BOARD MEETING & UNWILLING GANDHI STATUE: 25th of February was marked as the unwilling of Gandhi Statue by the board members of our college followed by a meeting of board members with the principal. NIMSM: Students of National Institute of Micro, Small and Medium Enterprises of 7 countries visited our college with a motto of promoting small scale industries and to study about the culture and traditions of India. They collected information about the scope of hotel management in India and the facilities provided by the institute to the students. This was followed by the lunch organised in the Chefs Court along with a lecture from Mr. Sudha Kumar who cleared all the doubts of the guest.

Like the last year this year also 3rd students from IHM Hyderabad grab prizes at EXODUS Tourism Fest took place at Chirst Collage,Bengaluru organised by Department of Tourism Studies on 12th & 13th February.They maintain the flow, and this year they grab 3 prizes in 3 different compition.2nd in Dance, 1st in Docudrama,1st in Travel Solutions.

ANNUAL PHOTOSHOOT: College Photograph was organised by the college for all the students and the committee members. A separate photo session was done for the faculty and the helping staff.

INTERCOLLEGE CHESS COMPETITION: Vivek kakkar bought laurels to the college by bagging the first prize in the Inter College Chess Competition organised by Shri Shakti School of Hotel Management. INTRACOLLEGE SPORTS COMPETITIONS: The sports committee was all geared up for their sports event in college. They organised a number of indoor and outdoor events for the students and faculty of the college under the supervision of Mr. Kamble. The students were seen with high spirits cheering for their favourite team and participating in various events. BLOOD DONATION CAMP: On 20th of march the students were seen lining up for the blood donation camp organised by Thalassemia and Sickle Cell Society. Students volunteered for donating blood and were given certificates of the same. IRCTC Event : Mr. Sanjay k. Thakur was invited to the IRCTC head office in secunderabad as a chief guest to acknowledge the efforts of HSRT candidates who underwent a short term course in Food And Beverage Service.

IGNOU Counsellor Workshop: On 22-02-2016 to 23-02-2016 a workshop was organised by NCHMCT at IHM Bangalore for all the counsellors of various colleges on human resource management, IGNOU, improvement of marks and various other topics related to development of the students and the faculty.

HSRT Inspection : Mrs. Kalayani along with Mrs. Rachna and Mr. Larry (HSRT Co coordinator) went to different hotels like Taj Group of Hotels, Ramoji Film City, Golkonda Resorts and IRCTC to conduct inspection of the HSRT programme and for skill testing of the students was done.

March,2016: Cultural Competitions The Cultural Committee geared up for organizing various competitions starting from karaoke to drawing and origami competitions. Students participated with great zeal and showcased their hidden talent. Hindi poem & essay competition Hindi poem & essay competition was organized by Hindi Committee under the supervision of Mr. Suman. Students were given a topic to speak on for a minute and judged by Mr. Rajneesh and Mr. Suman-faculty members. Campus interviews Adani Wilmar (08-03-2016) ITC Windsor Bangalore Skype Interview (17-03-2016) Ikebana Workshop Guest lecture on Ikebana, Japanese Style of flower arrangement was conducted by Hokiku Vineetha Sunil Kumar for 2nd year students.

First Aid Workshop The ROTARACT CLUB of IHM HYD organised a first aid workshop for final year students. Mr. Roy Joseph Mampally, an alumnus of our college and Managing Director, Merquri Medica demonstrated the first aid procedures for many medical emergencies. He trained and certified few students who can perform Cardio Pulmonary Resuscitation (CPR) and administer automatic external defibrillator (AED).

Women’s Day Celebration : The lady staff of our college was felicitated by final year students. They were given roses and chocolates to mark the occasion. The support staff was also honoured.

Sports day Prize Distribution Sports committee organised the annual sports prize distribution programme. The chief guest for the event was Mr. Dinakar Babu, IAS, Chairman Sports Authority of Telangana State. Other guests of honour included Mr. Noshir Mehta, well known cricketer, Mohtesham Ali, renowned bodybuilder & the precocious teenager Ms. Naina Jaiswal, Table-Tennis player.

Committee Prize Distribution The Literary Committee successfully organised the Annual Prize Distribution programme. The guests of honour included two former principals Mrs.Yamuna Ranga Rao & Mr. K. XVIII Measures taken/System in place to prevent ragging Top priority was given to maintain discipline in the campus by forming various Committees. In addition, ‘Anti-Ragging Committee’ and ‘Flying Squads’ were also formed with the Senior Faculty members / Senior Supporting Staff members along with Senior students, to prevent ragging inside and outside the campus. They keep the nation young as they keep the people young. “Victory is a combined affair not an individual one”. The prizes for the sports committee event was distributed in the presence of principal Mr. SANJAY THAKUR & chief guest Mr. DINAKAR BABU vice chairman and Managing Director (SATS), and Guest of honour Mr. NOOSHER MEHTA, Ms. NAINA JAISWAL, Mr. MOHTESHAM ALI invited with a pleasant afternoon and certificates and medals were distributed to winners and runner up on the event. XXXV. CBSP PROGRAMME: Under the Scheme of Capacity Building for Service Providers with the Assistance of MoT, Govt. of India, short term courses i.e. eight weeks Course in Food Production, Bakery and six weeks course in F&B Service, House-Keeping and Event Facilitators are being conducted for unemployed youth within the age group of 18 yrs to 28 years as a part of ‘Hunar Se Rozgar and Skill Certification Programme. XXXVII ANY OTHER ASPECTS: YOGA & PHYSCIAL CLASSES: Part-time coaches for Yoga & Physical exercises were appointed to conduct Yoga and Physical exercises for Hostel Residents (Girls & Boys) on daily basis. This is giving a good result among the Hostel Students for their physical and mental fitness. ART OF LIVING CLASSES: In order to inculcate good living habits & change in life style, the IHM-Hyderabad tied up with “YES” (Youth Empowerment Service) organization. Two batches of students were enrolled for the one week duration of program. The students feed back is highly encouraging as there is considerable change in their life style. XXXVIII VIGILANCE ACTIVITIES AND ACHIEVEMENTS: Under preventive vigilance, procedures were streamlined and period inspection of sensitive areas and records like supply of stores, purchases, repairs, imprest cash, advances, TA/DA, LTC claims, medical claims etc. were carried out and there was no case of misappropriation in the above areas during the period under report.

These financial statements are the responsibility of the institute’s management. Our responsibility is to express an opinion on these financial statements based on our audit. We conducted our audit in accordance with auditing standards generally accepted in India. Those standards require that we plan and perform the audit to obtain reasonable assurance about whether the financial statements are free of material misstatement. An audit includes examining, on a test basis, evidence supporting the amounts and disclosures in the financial statements. An audit also includes assessing the accounting principles used and significant estimates made by management, as well as evaluating the overall financial statement presentation. ii) In our opinion, proper books of accounts as required by law have been kept by the institute so far as appears from our examination of those books. iii) The Balance sheet and Income and Expenditure account dealt with by this report are in agreement with the books of account. iv) In our opinion and to the best of our information and according to the explanations given to us, the Balance Sheet gives a true and fair view of the affairs of the institute and the Income and Expenditure account gives a true and fair view of the excess of income over expenditure for the year ended 31st March 2016 subjct to. 1) Depreciation fund is under provided by an amount of Rs. 1,84,24,988/-. This has the effect of overstating capital fund profit by a like amount.

I.

Depreciation

:

Since the amount of depreciation including present year works out Rs. 2,39,00,530 which is at higher side, an amount of Rs. 49,75,542 has been transferred to Balance Sheet under “Depreciation Fund account” leaving balance of Rs. 1,84,24,988 which shall be provided in next few financial years taking into account the savings.
